Rocio and Alejandro are a small vineyard that produces high quality wines and totally artisans, the soil is mainly chalk. Early hand harvested compared with other vineyards around from the same varieties. They harvest in August and sometimes at nigh in order to avoid spontaneous fermentation because of the heat. Fermented on their own lees, the Palomino & Pedro Ximenez separately, both very aromatic, stay for at least 20 days resting on their lees and later when they are ready they do mixed them. Grapes are 90% Palomino & 10% Pedro Ximenez and yes it is wine not sherry. They only produces 3.800 bottles of this wine

Ageing: Stainless steel for 20 days separately a few months on another deposit moving then every week till they reach their maturity. Unfiltered
Serving temperature: 16º – 18ºC
Tasting notes: On the nose is intense, fruity (peaches), floral, mediterranean (thyme & rosemary), fresh and easy. On the mouth is intense, where fruit and minerality given by the chalk soil, mixed longer. Well balanced, wide, fresh, matured and warm, very good acidity, persistent.
