San Simón Smoked Cheese 1kg (approx)
This tetilla-type cow's milk cheese is produced by a small family of cheese makers known as Queixeria Casleiras, located in the small village of Oleiros, at the heart of Terra Cha in Galicia, a lush and green area, filled with chestnut, oak and birch trees. Before the days of refrigeration, many fresh cheeses were lightly smoked over a hard wood fire to preserve them. This is essentially how San Simón came to be. It is naturally smoked with birch wood and cured for around two months. It is a soft, smooth and deliciously creamy cheese with a flavour that is reminiscent of almonds, hazelnuts and vanilla. This cheese, just like a fine wine, gets better with time and can be enjoyed alongside many Spanish classics such as Jamón Serrano, olives, nuts and especially fruits. Queixeria Casleiras are the only cheese makers with P.D.O. to obtain the guaranteed stamp of Galicia Calidade.
