Roasted Red Peppers from Rioja 350g

Direct from the Rioja area of Spain we bring you a perfect example of Spanish red peppers – Pimientos de Tricio, wood-fire-roasted, hand-peeled and only available in Spain until now.

San Bartolome is a family-run company placed in Tricio, a small town in the Rioja area. The production of their peppers spans generations. A popular way to serve them is with paella and this variety can be found in every Spanish kitchen, as it is a more affordable pepper than the Piquillo. It also works really well in a salad with Light Tuna Belly meat, or served alone with a little extra-virgin olive oil, sherry vinegar and fresh garlic. It also partners very well with crab and/or shrimps and salted cod, with fried eggs and even red meat. One of our favourite ways to serve them is stuffed with fish and seafood.

The way the peppers are preserved is unique. The farmers pick them between August and October and bring them to Tricio via baskets. They are quickly sorted by size. After roasting in the traditional way and whilst still hot, the peppers are individually skinned (with great precision as to remain unbroken and whole), cored and seeded by the local women using only a cloth and a small paring knife. Finally, they are hand-packed very carefully in the jars with their natural juice, without every coming into contact with either water or brine. Imitation is the sincerest form of flattery – so be careful not to bargain hunt. Only Tricio peppers with the tightly monitored IGP Pimiento Riojano label are guaranteed to be grown in the Rioja countryside and produced using the basic artisan process.
