Sardines in olive oil (hot)
Like a good wine, these tender, little sardines (known as Xoubiñas locally) improve with age. They are lightly steamed to retain their flavour, then hand-packed and marinated in a piquant olive oil that gives them an extra bite. Boost your omega-3 intake by adding them to pasta, baked potatoes, or try them as a starter on rustic bread with just a squeeze of lemon juice. A glass or two of well-rounded Adega Algueira is a good partner for these little fish.
