It grows spectacularly on coastal rocks during the spring, in very well lit waters, rich in nutrients. Hand-harvested at low tide or by diving, only the healthiest, most clean and vigorous specimens adhered to the rocks are selected.

When eaten raw, it is very tasty dressed in salads and excellent toasted or fried. It can be served as a garnish or as a bed for meat and fish dishes. It is a superb ingredient when preparing soup, creams, hotpots, croquettes and pies. To enhance its flavour, it can be lightly baked in the oven then used to wrap rice with raw or marinated fish - the well-known green sushi in Japanese cuisine. It is delicious on its own as a snack or when crushed between the fingers. Also as an original and colourful seasoning for fish or shellfish dishes and soups.

100% Sea Lettuce

Soak for 5 minutes in slightly salted water. Can be added directly to boiling water. Should not be cooked for more than 15-20 minutes.

When eaten fresh, it has a delicate texture and a succulent flavour similar to crustacean seafood, and therefore can be used in an endless number of dishes. It is high in proteins and rich in calcium, magnesium, potassium, vitamin C and niacin.
