It is present in microscopic form throughout the year on coastal rocks in the cold waters of the Atlantic Ocean. In springtime, it awakens and reaches spectacular growth. It is hand-harvested at low tide or by diving, with only the healthy, strong coloured specimens being gathered.
Although it has a very thin blade, it is also very consistent and is at its finest when boiled, toasted or fried. The dried and baked flakes can be eaten directly as a snack. Also crushed in a mortar and used as an original, colourful and tasty seasoning for fish or shellfish dishes and soups.

Soak for 5 minutes in slightly salted water. Can be added as an ingredient before cooking. Can be cooked for about 15-20 minutes.
Due to its intense sea flavour and exceptional nourishing qualities, it is the most widely consumed seaweed in the world. It is very high in proteins and rich in phosphorus, iron and vitamins A, B and C.
