Wild Ballobar Capers 140g
Boasting a colourful history and complex flavour, Ballobar capers are a rare delicacy loved by Michelin chefs and home cooks alike. Growing wild in the Monegros dessert, these ecologically produced capers are still collected by hand in a tradition that dates back more than 500 years. The results are so good that a Russian Tsar was even prepared to pay for them in caviar.
In the 1980s the long history of the Ballobar caper was in danger of dying out. Competition from Andalusian and North African caper growers became so strong that Ballobar Caper harvesters could no longer make a living. Production became so limited that only enough capers to feed the village were collected. Luckily, two members of the Association of Ecological Producers of Monegros are now working to bring this highly prized, artisinal product to the world and revive the local economy of Ballobar.
These Ballobar capers are small, delicate and fragrant. As no preservatives, additives or heat are used in the production process, these capers have a beautifully firm texture and are classified as ‘raw food’.
