Appearing towards the end of autumn, in cooler waters in wave battered areas of the coast it grows to a length of more than 2 metres. March is the ideal time for harvesting as it disappears at the beginning of summer. The best part of the seaweed is the large blade, shaped like a double comb. The characteristic central spine is not normally eaten.

It is excellent eaten raw, and very tasty in tossed salads. When boiled or sautéed it acquires a soft consistency and a beautiful dark green colour that resembles spinach. It can be used to replace this in an endless number of recipes and also used as a garnish or a bed for seafood and fish dishes or even added to boiling water. It is a great ingredient for preparing soups, rice dishes, meat-free hotpots, croquettes and pies. Lightly bake it in the oven to enhance its flavour. When prepared like this it can be eaten directly as a snack or used as a seasoning after crushing.

100% Undaria Pinnatifida Seaweed

Soak for 10-15 minutes in slightly salted water. The dried seaweed can also be added directly to boiling water. Do not boil for more than 20 minutes.

Its flavour resembles the oyster and it has a delicate, slightly crunchy texture that is very pleasing on the palate. Due to its richness in glutamic acid, it enhances the flavour of any food it accompanies. It is high in protein, rich in calcium, magnesium, potassium, phosphorus, iron, vitamin B and niacin.
