It grows in abundance along the stretches of the Atlantic. In its fresh form the plant is soft and cartilaginous, varying in colour from a greenish-yellow to a dark purple or purplish-brown. It is hand-harvested at a time when the plant is most healthy and packed with nutrients.

Add to salads, rice dishes or pasta. Due to its thickening quality, it is especially useful when preparing sauces. After cooking for over an hour, it produces a gelifying liquid that can be used as a thickener when preparing soups, sauces, vegetable and creams.

Soak for 5 minutes in slightly salted water then cook for about 30 minutes.

Irish Moss is a major source of carrageenan, which is commonly used as a thickener and stabilizer in processed foods, including ice cream and luncheon meat. It is high in fibre and very rich in vitamin A, calcium, sterols and antibacterial substances.
