Kombu (Laminaria Ochroleuca) (dried) Raw (50g)

Growing over 3 metres long, this webbed blade seaweed is divided into several ribbons growing from a long, thick stem firmly fixed to the rocks. It is hand-harvested by divers at a time when the blades are most healthy and packed with nutrients. The blades of the adult specimens are cut above their base, just as it happens naturally in heavy storms, ensuring that these precious underwater plant formations with their high ecological value are not spoilt.

Can be used as a garnish, a bed for meat and fish dishes, or to wrap rice, fish or meat. It is a perfect ingredient when preparing stews, soups and rice dishes, croquettes and hamburgers. Due to their thickening quality, they are especially useful when preparing sauces. Lightly bake in the oven to enhance the flavour then crush in a mortar. Can be used as seasoning.

100% Kombu

Soak for 8-10 minutes in slightly salted water. Can also be added directly to boiling water. Do not boil for longer than 40 minutes.

KOMBU ribbons have a delicate sea flavour and a thick fleshy consistency. Because of their richness in glutamic acid, they enhance the flavour of the food they accompany. They also have an important thickening capacity due to their high content of soluble fibre. Kombu is rich in calcium, magnesium, potassium, phosphorus, iodine and vitamins B and C.
