Agar agar

Agar agar

Obtained from species of red algae, such as gelidium sps or gracilaria, Agar agar is the perfect vegetarian substitute for gelatine, creating a firm silky set. It has many benefits including quicker setting than gelatine and a higher melting point. Its ideal for jellies and mousses, also for mayonnaise, sauces, soups, ice cream and frozen desserts. Some traditional dishes that use agar agar are apple jelly (Japan), sesame tofu (Japan) and almond custard (China).

It also has a nutritional value, being high in fibre making it a great aid to the digestive system. It also contains potassium, calcium, magnesium, iron, zinc, vitamins E and K.

The percentage of agar agar per dish: 0.1 to 0.2% - beverages/sauces, 1 to 1.5% - consistent gel, 2 to 3% - moulds.
