Sea Spaghetti 25g (Himanthalia elongata)
Appearing every year in the heart of winter, it grows at breakneck speed, reaching maximum growth and commercial quality in mid spring, when the long ribbons are most tender, tasty and nourishing. This is when it is carefully hand-harvested from the best banks off the Galician coast.
Because of its flavour, shape and consistency, it is one of the seaweeds with the most gastronomic applications. Eaten fresh or prepared with young garlic, it goes well with rice, pasta and pulses. It can also be used to garnish fish dishes or as a new and attractive ingredient in soups and several first courses, such as in batters, with scrambled eggs, croquettes, pies, canapés etc.

Soak for 5-10 minutes in slightly salted water. Can be added directly to boiling water. Do not cook for longer than 30 minutes.
Its fleshy ribbons have a delicate sea flavour that is very similar to clams or cockles. Very rich in absorbable iron and vitamin C.
