Razor Clams in brine
These tender clams are a real Spanish speciality and some of the best in the world. Found along the coastal cliffs they are difficult and dangerous to harvest by hand, making them a delicacy to truly savour. Try them cold, or gently fry them in a little olive oil and garlic adding a squeeze of lemon at the end.
