Fried Mussels in escabeche
These plump, juicy mussels harvested fresh from the Galician estuaries are prepared by hand, hand-packed in tins and covered with a pickled sauce flavoured with Spanish spices. Serve them chilled or at room temperature, with crusty bread or in a salad. A fruity red wine such as Algueira is the perfect accompaniment.
